Star anise brings a bold, naturally sweet aroma with notes of licorice and warm spice. Its striking whole pods are made for slow infusion, releasing flavor as they simmer rather than disappearing into the dish.

Drop one into broths, braises, pho, mulled drinks, chai, poached fruit or syrups, then remove it before serving. It plays especially well with cinnamon, clove, ginger, citrus and savory spices.

Beautiful enough to photograph. Much more useful in the pot.
