White and black pepper come from the same plant, Piper nigrum, but white pepper is produced from mature pepper berries with the outer fruit layer removed. What’s left is a pale peppercorn with a distinctive earthy warmth and a gentler visual footprint.
Freshly grind it into cream sauces, mashed potatoes, soups, and light-colored dishes, or reach for it in Chinese and Southeast Asian cooking, where white pepper is a familiar staple.
We keep ours whole because pepper is at its best when freshly ground.
